My Little Loves!



I am a lucky Mom, and I know that! My kids are generally good kids! Harper however is in that stage where she wants to do EVERYTHING the older kids are doing and does not like to be told no, then throws a fit because of it (I think this has to do with her age), and I have been getting frustrated. I checked out a book from the library called, The Brat Stops Here. It so far has been giving me a few good tips, but really it has shown me that I have some pretty good kids. Some of the examples of other kids behaviors make my kids look like saints. So, I think I am going to keep doing what I am doing, return the book to the library, continue to enjoy my kids (fits and all) and have an awesome summer! I hope everyone had an awesome first day of summer!

MADE...

Chicken Ole! Need to have dinner ready in about 30 minutes or less? This is the recipe for you! Quick and yummy!


Keith had his over chips.

Ingredients:
-4 boneless skinless chicken breasts
-2 cans whole kernel corn
-1 can diced tomatoes
-1 can diced chilies
-1pkg chili seasoning mix
-tortilla chips or lettuce
-cheese
-sour cream

Directions:
-cut chicken breasts into strips
-heat 1 TBSP oil in large skillet and cook chicken until just about done
-stir in 2 cans undrained corn,can of tomatoes,can of undrained chilies, and chili seasoning mix
-bring to boil, reduce heat;cook for about 10 mins, stirring occasionally
-Serve over tortilla chips (or lettuce)
-sprinkle with cheese and sour cream.


I had mine over lettuce. Also a big plus, the kids love it!

All of the Disney parks (Hong Kong, Tokyo, Paris, Florida, and California)!

{four} what is your favorite outdoor activity?
Bike riding! I love when we load the kids up in the trailer and take a family ride!

{five} as a child, what did you want to “be when you grew up”? did you end up there?
A Teacher and a Mommy.
I was a pre-K teacher for a while, but need to get my heinie back into school to finish up my degree! I have two amazing kids, so I am definitely a Mommy and I love it!

{six} what are 3 things your dream home would have that you don’t currently have?
An extra bedroom, a bigger backyard (I want a HUGE one), and a wrap around porch!

{seven} what’s for dinner tonight?
Chicken Ole.

{eight} if someone stopped by your house unannounced on a typical Saturday night, what would they find you doing?
Me and my Hubby curled together on the couch watching a movie, or an empty house.

{nine} what’s your average monthly water bill?
Our water is lumped together with all of our utilities so I do not know how much just water is...

{ten} what do you do to relax?
Read or watch a movie.

MADE...

Baked Eggplant! So, I have been in need of some new recipes to throw into the weekly mix and came across this delish eggplant recipe! Not only is it on the healthy side, but also on the cheap side too. That is a win win in my book!

(Served with salad and cheesy broccoli)

Baked Eggplant:
1 eggplant, peeled and sliced into rounds (not too thin but not too thick. I got about 6 slices from one eggplant.)

2 eggs, beaten

Italian seasoned bread crumbs

Spaghetti sauce

Shredded mozzarella cheese

Grated Parmesan cheese

1/2 teaspoon dried basil (or fresh if you have it!)

Pre-heat oven to 350 degrees.

Take a baking tray and line it with foil, then give a good drizzle of olive oil all over it.

Dip the eggplant slices in the egg, then the bread crumbs . Give it a good breading on both sides. Then lay on the baking tray.

Repeat for all remaining slices (do not overlap...make sure they are all a single layer) and then put in oven at 350 degrees for 10 minutes. Flip slices, add another drizzle of olive oil if needed, and then bake for another 10 minutes.

After they are done, drizzle some spaghetti sauce over and around them. (I used a tomato and basil spaghetti sauce and it was SO good).

Then sprinkle some mozzarella and parmesan cheese on top. Also give it a nice sprinkling of dried basil. Bake for another 20 minutes or so, until cheese is nice and melty and golden brown.
